Just switch! - Printing large Spreadsheets in StarOffice 8
StarOffice 8 provides a lot of flexibility with respect to printing out large spreadsheet documents. In order to setup the page layout one has to bring up the "Page Style" dialog via "Format - Page ...":

Within the "Page Style" dialog one can define the paper format and orientation.

On the "Sheet" tab one can either select to scale the printout by a given percentage ...

... or by a specified number of pages:
