The folks at DataDyne.org just got
slashdotted
for their wonderful work “developing sustainable, opensource information technologies to help CDC, WHO, the American Red Cross, UNICEF, and others use information technology to collect and share health information in service to the world's most needy populations”. Most of the Java cell phone apps that folks in North America see are games. But there are lots of non-games, this is a particularly wonderful one.

Also take a look at GMail.app at http://gmail.com/app
Its a nifty little Java application for cell phones which lets you access your GMail account without having to download your mails to your phone.
Its a classical example of "The Network is the Computer".
