1) Just about anything related to dtrace and operating systems 101. Operating systems are so complicated that many introductory operating system classes don't actually teach using a commercial OS, they use an OS simulator like Nachos. With dtrace there are about 30,000 things you can learn about what the OS is doing, which should be more than enough for a semester class.
2) Integrate Solaris container provisioning with your school's eLearning software, or better yet with Sakai. If you are lucky enough to have your school teach OS 101 with a real OS, your classroom probably has a dedicated PC for every student so you can each work with your own OS without impacting other students. Sort of hard to do that with online learning with a dynamic number of students. How about giving each student their own Solaris container. The Clingan Zone would even buy you a cup of coffee at Starbucks for that demo. Better yet, I'll buy you a pound of good coffee.
3) If your really game, port OpenSolaris to Sony's new CELL processor.
