...or should that read "mush?"


 For the record, when the polenta recipe calls for one cup of corn meal and says it serves four, that's really four large, main-dish portions.  At the time, it seemed like a good idea to increase the recipe, because four servings didn't really sound like much, and I was cooking for guests. 


Here I quote my girlfriend, as she watched me whisking away: "what are you planning to do with all the leftover polenta?"


 At least it's tasty...

in my opinion? there's no such thing as too much polenta! especially if it creamy, with lots of cheese! and you can make polenta lasagna with the leftovers...

It's both. "Polenta lasagna" sounds like a good, multinational answer to the leftover question. I wouldn't complain if you sent me the recipe.
