I've decided to start a little weekly feature here at the SDN'sider called "Cooking with SDNGal." I love to cook. Love, love, love it. And so I thought once a week I'd share my favorite recipes. No photos though. Because I'm not Pioneer Woman. Anyway, this week's recipe is a fabulous jello salad. I know what you are thinking....jello salad? How 1950s of me. But really, it's super yummy and the whole family loves it. The recipe was given to me by my Aunt, and it was given to her by a dear friend. I've modified it a bit, so now it's kinda my own. Here goes:

Raspberry Jello Salad

2 Small packages of Raspberry Jello
1 C. boiling water
1/2 C. cold water
2 10oz. packages frozen raspberries DEFROSTED AND DRAINED (this is so, so important. Trust  me)
1 1lb. 4oz. can crushed pineapple
3 medium bananas mashed
1 pint sour cream

Dissolve jello with hot water then add 1/2 C. cold water, berries, pineapple (with juices) and bananas. Turn 1/2 mixture into 12x9 dish and refrigerate for approx. 1 1/2 hours until set. (While waiting for first half to set, leave the remainder in a bowl on the counter...do not refridgerate or it will set). Spread first layer with sour cream, then spoon remaining mixture on sour cream layer and refriderate until firm.

I'm telling you...this is happiness in a bowl. Especially in hot weather!
