Cooking with SDNGal
Ok, so this week's recipe is another dessert. Do you see a pattern? ;) It's a family recipe for Apricot Bars and they are very, very yummy. So proceed at your own risk!
SDNGal's Apricot Bars
2/3 C. dried apricots
1/2 C. softened butter
1/4 C. Sugar
1 1/3 C. sifted flour
1 C. brown sugar
2 well beaten eggs
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla
1/2 C. chopped almonds
Rinse apricots, cover with water, simmer 10 minutes. Drain, cool, and chop. Combine butter, sugar, 1 C. of flour and mix well until crumbly. Press mixture into bottom of greased 9x9 inch pan. Bake 20 minutes @375.
Beat eggs gradually, adding in brown sugar. Add to egg/brown sugar mixture remaining sifted flour, baking powder, and salt. Mix well. Add vanilla, 1/4 C. of almonds, and chopped apricots. Spread mixture on baked layer. Sprinkle with remaining almonds and bake for 20 minutes @350. Cool, cut, enjoy!
